Mini Meatloaf Muffins

Another staple in my house!  Who loves comfort food?  ME!  This hits the spot for sure and reminds me of my mama's less-than-healthy homemade meatloaf!  Only difference?  This recipe is full of protein and low in fat, but still tastes delicious!

Mini Turkey Meatloaf Muffins

Yields 12 muffins
Serving size = 2 muffins

1.25-1.5 lb ground lean turkey
1 cup old fashioned oats
3 egg whites
1/4 cup chopped onion
1/2 cup diced peppers
sprinkle of sea salt
crushed ground pepper to taste
1 tsp ground thyme
1 tsp ground mustard
1 tsp garlic powder

Topping:
Heinz reduced sugar ketchup
**Ideal (xylitol) brown sugar** optional

Preheat oven to 350.  Prepare muffin pan by coating each tin with non stick spray, or line tins with foil wrappers.  Mix all ingredients together and divide among 12 tins.

Bake for 30-40 minutes or until thoroughly cooked.  Drain any excess grease from tops with paper towel.  Top each muffin with a tablespoon of Heinz reduced sugar ketchup and a sprinkle of Ideal (xylitol) brown sugar.  Return to oven for additional 5-10 minutes.
